โปรแกรมสุขศึกษาในการสุขาภิบาลอาหารของผู้ขายอาหารริมบาทวิถี ในเขตอำเภอจอมบึง จังหวัดราชบุรี

Abstract

การวิจัยครั้งนี้ เป็นการวิจัยกึ่งทดลอง (Quasi-Exeperimental Research) วัตถุประสงค์ เพื่อศึกษาประสิทธิผลของโปรแกรมสุขศึกษาในการสุขาภิบาลอาหารของผู้ขายอาหารริมบาทวิถี โดยการจัดกิจกรรมแบบมีส่วนร่วมและให้แรงสนับสนุนทางสังคม กลุ่มตัวอย่างเป็นผู้ขายอาหาร ริมบาทวิถี ในเขตอำเภอจอมบึง จังหวัดราชบุรี จำนวน 30 ตัวอย่าง ระยะเวลาดำเนินการวิจัยระหว่าง เดือน มกราคม ถึง พฤศจิกายน 2549 เก็บข้อมูลก่อนและหลังโปรแกรมสุขศึกษา โดยใช้แบบ สัมภาษณ์และแบบสังเกต วิเคราะห์ข้อมูลของกลุ่มตัวอย่าง โดยใช้สถิติพรรณนา และ Paired Sample t-test ผลการวิจัยพบว่า โปรแกรมสุขศึกษาที่จัดขึ้นทำให้ผู้ขายอาหารริมบาทวิถีมีความรู้ การรับรู้ เพิ่มมากขึ้น และการปฏิบัติตามข้อกำหนดด้านสุขาภิบาลอาหารถูกต้องมากขึ้น อย่างมีนัยสำคัญ ทางสถิติ (p < 0.05) ข้อเสนอแนะในการวิจัย คือ การปรับปรุงสุขาภิบาลอาหารแผงลอยควรจัด กิจกรรมโดยการให้ความรู้และการจัดการความรู้ด้านสุขาภิบาลอาหารอย่างมีส่วนร่วมของผู้ขาย อาหารเพื่อเกิดประสบการณ์ตรงจากผู้ขายอาหารด้วยกัน ควรให้แรงสนับสนุนทางสังคมและการให้ แรงจูงใจโดยการแจกอุปกรณ์ที่ผู้ขายอาหารต้องการ การปรับปรุงสภาวะสุขาภิบาลอาหารแผงลอย ควรจัดการดำเนินการฝึกอบรมแนะนำปรับปรุงหรือการจัดกิจกรรมการเรียนรู้และการฝึกปฏิบัติแก่ ผู้ขายโดยใช้สถานที่ใกล้เคียงหรือสถานที่เดียวกับที่ขายอาหาร ควรมีการติดตามประเมินผล การ ตรวจสอบด้านสุขาภิบาลอาหาร โดยเทศบาลหรือหน่วยงานที่เกี่ยวข้องอย่างสม่ำเสมอและต่อเนื่อง

This study was a quasi-experimental research aiming to assess the effectiveness of a health education program on food sanitation for street food venders by organizing participatory activities and providing social support. The sample was composed of 30 street food venders in Chombueng District, Ratchaburi Province. The research was organized during January to November, 2006. The data were collected before and after the program by using an interviewing schedule and observation form. The data were analyzed by computing descriptive statistics and comparative analysis of paired sample t-test. The results of the study showed that the health education program was effective in increasing significant knowledge, perception and practices in accordance with food sanitation criteria among street food venders (p<0.05). It is recommended that in order to improved food sanitation of street food venders, the participatory training program should be organized to enhance street food venders’ knowledge and knowledge management regarding food sanitation, including providing them with social support and encouragement by giving them the materials necessary for improving sanitation condition of street foods. A training program of learning activities and practice sessions should be organized in the areas nearby or at their food stands. Regular and continuous follow-up and evaluation and food sanitation inspection by the municipality officers or other concerned organizations should be made.
