Instant dietary fiber-supplemented beverage mixes from papaya

Abstract

Instant, dietary fiber-supplemented beverage mixes were developed from the dietary fiber extract of papaya fruit (Carica papaya Linn.). Pectin was extracted, precipitated, semi-purified, dried and used for beverage mixes. Besides pectin from papaya, the five beverage formulations also consisted of a synthetic flavoring agent (watermelon flavor), sweetening agents (sucrose/fructose/aspartame/ combinations), sodium chloride and citric acid. The reconstituted beverages, reddish orange in color, contained 2.2% w/v of papaya pectin; the total dietary fiber content was 3.64 g per serving (1 glass = 250 ml), 3.44 g of which was soluble dietary fiber. Sensory evaluation was carried out, using 9-point Hedonic Scale method among 50 panelists. Analysis of Variance (ANOVA) was used for interpretations of the acceptance of the reconstituted beverage. The mean hedonic scores for all 5-formulae were not significantly different (P>0.01).
