พฤติกรรมการบริโภคและความพึงพอใจในการใช้โรงอาหาร : กรณีศึกษาโรงอาหารคณะสาธารณสุขศาสตร์ มหาวิทยาลัยมหิดล

Abstract

การวิจัยเชิงสำรวจนี้มีวัตถุประสงค์ เพื่อศึกษาพฤติกรรมการบริโภคและความพึงพอใจในการใช้บริการ โรงอาหารของผู้รับบริการในโรงอาหารของคณะสาธารณสุขศาสตร์ มหาวิทยาลัยมหิดล ประชากรที่ศึกษาคือ นักศึกษา บุคคลภายในคณะสาธารณสุขศาสตร์ และบุคคลทั่วไป จำนวน 419 คน เครื่องมือที่ใช้ในการศึกษาประกอบด้วย แบบสอบถามข้อมูลส่วนบุคคล แบบสอบถามเกี่ยวกับความรู้และโภชนาการ ความพึงพอใจในการใช้โรงอาหาร และพฤติกรรมในการบริโภค วิเคราะห์ข้อมูลโดยใช้สถิติเชิงพรรณนาและพิสูจน์ความสัมพันธ์ โดยใช้ Pearson Correlation และ Pearson Chi-square test ผลการวิจัยพบว่า อายุมีความสัมพันธ์กับความรู้และโภชนาการ และความพึงพอใจ ในด้านสถานที่ประกอบการ อย่างมีนัยสำคัญทางสถิติ (p<0.001 และ p = 0.001 ตามลำดับ) และประเภทผู้ใช้บริการที่เป็นบุคคลภายในคณะสาธารณสุขศาสตร์มีความสัมพันธ์กับความพึงพอใจด้านสุขาภิบาลอาหาร และความพึงพอใจ ด้านสถานที่ประกอบการ อย่างมีนัยสำคัญทางสถิติ (p = 0.025 และ p = 0.014 ตามลำดับ) ข้อเสนอแนะบางประการคือ ควรปรับปรุงด้านสุขาภิบาลอาหาร และสถานที่ประกอบการให้มีความสมบูรณ์ตามหลักวิชาการมากขึ้น The objective of this survey research was to study consumption behavior and satisfaction in the canteen of consumers in the Faculty of Public Health, Mahidol University. The research population consisted of 419 student consumers, staff from the Faculty of Public Health, and other random consumers. The research instruments used were the personal data questionnaire, knowledge about food and nutrition questionnaire, consumption behavior, and satisfaction in canteen of consumers. Descriptive statistics, Pearson Correlation, and Pearson Chi-square test. Results indicated that there were significant associations between age and knowledge about food and nutrition. (p<0.001), and satisfaction of environmental sanitation. (p = 0.001) There were significant associations between consumers in the Faculty of Public Health, and food sanitation (p = 0.025), and satisfaction in environmental sanitation. (p = 0.014) Some of the recommendations were that food sanitation, and environmental sanitation should be improved.
