Abstract
งานวิจัยนี้ศึกษาความสำคัญของ "ถั่วเน่ากลุ่มชาติพันธุ์ไทลื้อ" และความเปลี่ยนแปลงในการผลิตตั้งแต่อดีตจนถึงปัจจุบัน โดยมีวัตถุประสงค์เพื่อ ๑) ศึกษาวิธีการผลิต การบริโภค และความสำคัญของถั่วเน่าต่อชาวไทลื้อในอดีต และในปัจจุบัน และ ๒) ศึกษาสาเหตุของความเปลี่ยนแปลงของวัฒนธรรมถั่วเน่ากลุ่มชาติพันธุ์ไทลื้อ โดยทำการเก็บข้อมูลจากชาวไทลื้อใน ๕ หมู่บ้าน ได้แก่ บ้านเชียงบาน บ้านแพทย์บุญเรือง ตำบลเชียงบาน บ้านธาตุสบแวน บ้านมาง ตำบลหย่วน และบ้านสันเวียงทอง ตำบลน้ำแวน อำเภอเชียงคำ จังหวัดพะเยา แบ่งกลุ่มผู้เข้าร่วมวิจัยเป็น ๒ กลุ่ม คือ กลุ่มผู้ผลิตถั่วเน่ากลุ่มชาติพันธุ์ไทลื้อในปัจจุบันจำนวน ๙ ราย และกลุ่มผู้บริโภคถั่วเน่าไทลื้อ ๔ ช่วงอายุจำนวน ๑๒ ราย ผลการวิจัย พบว่า "ถั่วเน่ากลุ่มชาติพันธุ์ไทลื้อ" เป็นวัฒนธรรมอาหารที่มีความสำ คัญต่อการดำ รงอยู่ของวัฒนธรรมไทลื้อ ถั่วเน่าถูกปรับใช้ให้เข้ากับสภาพแวดล้อม ความเชื่อ และวิถีชีวิตชาวไทลื้อมาอย่างยาวนาน ซึ่งปัจจุบันถั่วเน่าถูกปรับเปลี่ยนให้เหมาะกับวิถีชีวิตในปัจจุบันชาวไทลื้อเชียงคำมากขึ้น หากในอนาคตอัตลักษณ์ของถั่วเน่ากลุ่มชาติพันธุ์ไทลื้อสูญเสียไปอาจส่งผลต่อสมดุลในสภาพสังคมวัฒนธรรมของชาวไทลื้อ
The research aimed to investigate the importance of Tai Lue's fermented soybeans and the changes in manufacturing from the past to the present. The research objectives were 1) to examine the production process, consumption and the importance of Tai Lue's fermented soybeans. in the past and the present, and 2) to identify the cause of change. Data was collected from Tai Lue people in five villages in Chiangkham District in Phayao Province, Two groups of informants including 9 Tai Lue fermented soybean makers and 12 consumers from different groups. The result of the research shows that Tai Lue fermented soybeans is culturally important to the survival of the Tai Lue culture. Tai Lue fermented soybeans has been well blended to the environment, the beliefs and the way of life for years. Today Tai Lue fermented soybeans is adapted to meet today's lifestyle. If the identity of Tai Lue fermented soybeans is not appropriately protected, the balance in socio-cultural condition would be affected.
