dc.description.abstractIn recent times, the increased demand for packaged foods has led to a remarkable development of different types of films and coatings. Further, to reduce synthetic packaging and develop packaging that is less polluting and more environment friendly, various research is being focused on using materials that are either naturally derived or are made from renewable sources. Hence, due to these, biodegradable films and edible coatings prepared using proteins are gaining increasing attention and being used more in the food processing industries. One of these proteins includes soy proteins, which are a popular choice for the preparation of films and coatings and the development of smart packaging because they are inexpensive, are abundant, and have high protein content. Not only that, protein-based films have the ability to be used in different types of packaging, increasing their applicability. This chapter intends to provide a comprehensive review of the development, functionality, characterization, and applications of soy protein-based films and coatings. It will also discuss the mechanism through which they provide protection to the food products and help improve their quality and safety.
